
I have had the distinct privilege of learning to can this week under the guidance of my husband’s grandmother, who is visiting family around the country this summer away from the heat of home in Arizona. We canned tomatoes today using her steam canner she had given me a few years ago. It was quite easy and not as intimidating as I had made it out to be. Steam canning is much like a hot water bath, but requires less water, and therefore less time, as you don’t have to wait for a large amount of water to boil.
